Poached Pear Galette
- 3 cups water
- 1 cup sugar
- 1 None cinnamon stick
- 2 None firm ripe pears, peeled, halved and cored
- 1 None sheet puff pastry, thawed
- 1 cup heavy cream
- 1/4 cup candied macadamias, or chopped pistachios or almonds
- Preheat oven to 350u0b0F. Lightly grease and line a baking sheet with parchment.
- In a saucepan combine water, sugar and cinnamon stick. Heat on medium, stirring until sugar dissolves. Boil, without stirring, for 1 minute. Reduce heat and add pears. Place a saucer on top of pears to keep submerged. Simmer 20-25 minutes, until tender. Remove pears and drain well.
- Boil cooking liquid for 15-20 minutes, until reduced to about 1 cup. Set aside.
- Cut pastry sheet into four pieces. Place on prepared pan. Fold sides 1/4 inch over to form an edge. Place a pear half in center of each and brush with a little syrup. Bake 10-15 minutes, until golden. Serve with cream, a drizzle of syrup and a sprinkling of candied nuts.
