Apple Pecan Bread

  1. Preheat the oven to 350u0b0F. Lightly grease and line an 8 x 4-inch loaf pan with parchment paper.
  2. Sift flour, baking powder and cinnamon into a large bowl. Stir in the sugar, apples and pecans.
  3. Combine butter, eggs and vanilla in a medium bowl. Fold into dry ingredients, until combined. Pour mixture into prepared pan.
  4. Bake 55-60 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; completely on wire rack.
  5. Meanwhile, for the caramelized apple, melt butter and brown sugar in a medium skillet. Add apple slices. Stir on low heat until caramelized and tender. Serve with the warm cake.
