Key Lime Pie

  1. Preheat oven to 325u0b0F. Grease and line an 8 inch springform pan with parchment paper.
  2. Process graham crackers and sugar in a food processor until finely crushed. Add butter and process until combined. Press into base and 3/4 of the way up the side of prepared pan. Chill for 10 mins. Bake for 10 mins, or until golden brown.
  3. Meanwhile, whisk together whole eggs, yolks and lime zest for 2 mins, until light and creamy. Add condensed milk, lime juice and heavy cream. Whisk for 1 min, until combined. Transfer to prepared pan and bake for 45 mins, or until just set at center.
  4. Let cool in pan for 1 hour. Chill for 2 hours. Serve topped with lime slices and whipped cream.
