Key Lime Pie
- 7 oz graham crackers
- 2 tbsp granulated sugar
- 1/2 cup butter, melted
- 2 None eggs + 2 egg yolks
- 1 tbsp lime zest
- 1 (13.5 oz) can sweetened condensed milk
- 1/2 cup lime juice
- 1 cup heavy cream
- 1 None lime, thinly sliced, to serve
- None None whipped cream, to serve
- Preheat oven to 325u0b0F. Grease and line an 8 inch springform pan with parchment paper.
- Process graham crackers and sugar in a food processor until finely crushed. Add butter and process until combined. Press into base and 3/4 of the way up the side of prepared pan. Chill for 10 mins. Bake for 10 mins, or until golden brown.
- Meanwhile, whisk together whole eggs, yolks and lime zest for 2 mins, until light and creamy. Add condensed milk, lime juice and heavy cream. Whisk for 1 min, until combined. Transfer to prepared pan and bake for 45 mins, or until just set at center.
- Let cool in pan for 1 hour. Chill for 2 hours. Serve topped with lime slices and whipped cream.
