Corn And Avocado Salad
- 3 ears fresh corn on the cob
- 4 cups mixed greens
- 1/2 cup grape tomatoes, halved
- 1/2 cup diced cucumber
- 1 cup thin green beans, blanched, halved diagonally
- 6 None radishes, sliced
- 1/4 cup sliced red onion
- 1/2 None ripe avocado, peeled and chopped
- 1/2 tsp minced garlic
- 1/4 tsp lime zest
- 1 1/2 tsp lime juice
- 1 tbsp chopped scallion
- 1 tbsp chopped fresh cilantro leaves
- 1 tbsp vegetable oil
- Preheat a grill. Lightly coat corn with oil then grill over medium heat for 10 mins, until tender and lightly browned. Let cool then cut 1 ear of corn into rounds and the kernels off the remaining 2 cobs.
- Arrange mixed greens on a serving platter then vegetables over top. Whisk together garlic, lime zest, lime juice, herbs and oil. Season then drizzle over salad.
