Greek Salad
- 1 None onion, peeled and sliced
- 1 lb tomatoes, quartered
- 1 None cucumber, halved lengthways and thickly sliced
- 1 1/4 lbs mixed red and yellow peppers, deseeded and roughly chopped
- 1/2 lb feta cheese, cubed
- 1/2 cup stuffed olives, sliced
- 2 tsp fresh chopped oregano, plus extra sprigs to garnish
- 1/3 cup white wine vinegar
- 1/2 cup olive oil
- 4 None pickled peperoncini
- Place the onions, tomatoes, cucumber and peppers in a bowl. Toss to mix then divide between four shallow dishes. Top with the feta cheese and olives. Season with salt and freshly ground black pepper and sprinkle over the chopped oregano.
- Drizzle with vinegar and olive oil. Garnish with pickled peperoncini and sprigs of oregano. Serve with pita bread.
