Bolognese And Egg Toasted Sandwich
- 1 tbsp olive oil
- 1/2 None onion, chopped
- 1 clove garlic, crushed
- 8 oz ground beef
- 1/2 cup chopped mushrooms
- 1 tbsp tomato paste
- 1 cup diced tomatoes
- 1/4 cup red wine
- 1/2 tbsp chopped parsley, plus additional, to garnish
- 8 slices whole wheat bread
- 2 None eggs, lightly beaten
- For the bolognese sauce, heat oil in a large skillet on medium heat. Saute onion and garlic 3-4 mins, until tender. Increase heat to high; add ground beef. Cook 5-6 mins, until browned, breaking up lumps as it cooks. Add mushrooms and tomato paste. Cook, stirring, 1-2 mins.
- Mix in tomatoes and wine; bring to a boil. Reduce heat to low; simmer, stirring occasionally, 10-15 mins (adding a little water if it becomes too thick). Season to taste; stir in parsley. Cool slightly.
- Preheat a sandwich press on high. Spray surface with no stick cooking spray.
- Spoon bolognese evenly onto 4 slices of bread. Using the back of a spoon, make indentation in the center. Gently pour a little beaten egg into sauce. Top with the remaining bread slices.
- Toast in sandwich press 2-3 mins, until golden brown. Cut in half to serve. Garnish with additional parsley.
