Basil Frittata With Smoked Salmon
- 8 None eggs
- 1/4 cup light cream
- 1/2 cup finely grated Parmesan cheese
- 1/4 cup firmly packed fresh basil leaves, finely shredded
- 4 oz smoked salmon slices
- 1 cup baby spinach leaves
- 1/3 cup sour cream
- 1 tbsp horseradish cream
- Preheat the oven to 425u0b0F.
- Whisk the eggs, cream, cheese and basil in a large bowl until combined. Season.
- Heat an oiled 7-inch ovenproof skillet on medium heat. Pour in the egg mixture and stir gently. Cook for about 2 mins or until the bottom is set. Transfer the pan to the oven and bake the frittata for about 10 mins or until set and lightly browned.
- Cut the frittata into 3/4 inch-thick slices and place on a serving platter. Combined the sour cream and horseradish cream in a bowl. Top the frittata with smoked salmon, spinach and the horseradish cream and serve.
