Roast Chicken With Red Onion, Garlic And Cherries
- 1 (4 lb) chicken
- 1/2 None lemon
- 3 sprigs fresh thyme
- 10 cloves garlic
- 2 1/2 tbsp butter, softened
- 3 None medium red onions, cut into wedges
- 2 tbsp olive oil
- 8 oz fresh cherries
- Preheat oven to 350u0b0F.
- Stuff chicken with lemon, 2 thyme sprigs and 2 garlic cloves. Tuck wings under and tie legs together with butcher's twine. Transfer to a wire rack in a roasting pan, breast-side up. Rub butter over skin and season. Roast for 20 mins.
- In a separate roasting pan, combine onions, olive oil and remaining garlic. Add to oven with chicken and roast for 50 mins. Add cherries and toss gently to combine. Sprinkle chicken with remaining thyme. Roast for 10 mins, or until chicken is tender and cherries are hot. Serve chicken with cherry mixture.
