Butter Chicken

  1. Heat butter and oil in saucepan over medium-high heat. Add onion and cook for 5 mins. Add chicken and cook for 3 mins.
  2. Add garlic, chili powder, cumin, coriander, ginger and garam masala and stir to coat chicken with spices. Cook for 2 mins. Stir in tomato puree, cream and sugar and bring to a simmer, then reduce heat to medium-low and simmer gently for 10 mins, or until chicken is cooked through.
  3. Remove from heat and stir in yogurt. Season to taste. Spoon into serving bowls and garnish with cilantro and pistachios. Serve with rice and naan bread.
