Chilled Noodles With Peanut Sesame Sauce
- 14 oz lo mein noodles
- 2 tbsp peanut oil
- 2 None English cucumbers, shredded
- 1 None red pepper, finely sliced
- 1/3 cup sesame seeds, toasted and ground, plus extra, to serve
- 2 tbsp shredded ginger
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tsp sugar
- 2 tsp malt vinegar
- Cook noodles in a large saucepan of boiling, salted water according to packet directions. Drain, rinse under cold water and drain again. Place in a bowl with peanut oil and three-quarters of cucumber and pepper. Toss to combine.
- To make dressing, whisk together the sesame seeds, ginger, peanut butter, soy sauce, sesame oil, sugar, vinegar and 1/2 cup of water. Season with black pepper.
- Add dressing to noodles and toss to combine. Serve topped with remaining cucumber and extra sesame seeds.
