Chilled Noodles With Peanut Sesame Sauce

  1. Cook noodles in a large saucepan of boiling, salted water according to packet directions. Drain, rinse under cold water and drain again. Place in a bowl with peanut oil and three-quarters of cucumber and pepper. Toss to combine.
  2. To make dressing, whisk together the sesame seeds, ginger, peanut butter, soy sauce, sesame oil, sugar, vinegar and 1/2 cup of water. Season with black pepper.
  3. Add dressing to noodles and toss to combine. Serve topped with remaining cucumber and extra sesame seeds.
