Burgers Italiano
- 8 oz ground chicken
- 2 tbsp finely chopped drained sun-dried tomatoes
- 2 tsp finely chopped fresh basil
- 1 None egg white
- 1/3 cup stale breadcrumbs
- 1 clove garlic, crushed
- 2 slices pancetta
- 2 small focaccia rolls, split and toasted
- 1/4 cup mayonnaise
- 1/2 cup baby arugula leaves
- 2 oz bocconcini (small fresh mozzarella balls), thickly sliced
- Combine ground chicken, tomato, basil, egg white, breadcrumbs and 1/2 the garlic in a medium bowl. Shape mixture into 2 patties.
- Heat a nonstick skillet on medium heat. Spray with no stick cooking spray. Cook patties about 15 mins or until browned on both sides and cooked through.
- Cook pancetta in same pan until crisp. Drain.
- Combine mayonnaise with remaining garlic. Spread on rolls; top with arugula, burgers, pancetta and cheese.
