Cabbage And Ground Beef Casserole
- 200 g white cabbage, cut into strips
- 50 ml hot vegetable stock
- 1/4 tsp paprika
- 1 tsp oil
- 1 None small onion, peeled and finely chopped
- 75 g beef mince
- 1 tbsp tomato puree
- 2 tsp dried oregano
- 50 g feta, crumbled
- 1 None egg yolk
- 50 ml skimmed milk
- None None Fresh rosemary, oregano and quartered cherry tomatoes, for garnish
- Preheat the oven to 325u0b0F. Grease an ovenproof baking dish. Place the cabbage and 2 tbsp stock in a saucepan. Season with salt, black pepper and paprika. Cover and braise for 20 mins.
- Meanwhile, heat the oil in a pan and saute the onion until softened. Add the ground beef and cook until crumbly. Stir in the tomato paste and oregano and cook for 1 min. Stir in the remaining 2 tbsp stock.
- Spoon the cabbage into the baking dish. Add the ground beef mixture and sprinkle with feta. In a separate bowl, beat the egg yolk and milk, season, then pour over the ground beef and feta. Bake for 20-25 mins. Garnish with rosemary, oregano and cherry tomatoes.
