Apple, Strawberry And Rosemary Crumble
- 8 None medium red apples, peeled, cored, cut into 3/4 inch pieces
- 1/4 cup granulated sugar
- 1 lb small strawberries, halved if large, plus 4 oz halved to garnish
- 1 tsp ground cinnamon
- 1 tsp flour
- 2 tsp vanilla extract
- 1/3 cup maple syrup
- None None Rosemary Crumble
- 2 1/4 cups almonds
- 1 cup self-rising flour, plus 2 tbsp
- 2 tsp fresh rosemary leaves, chopped finely
- 1/2 cup cold butter, chopped
- 1/2 cup firmly packed brown sugar
- 2 tbsp maple syrup
- None None heavy cream or ice cream, to serve
- Preheat oven to 350u0b0F.
- Combine apples, sugar and 1/4 cup water in a large saucepan. Bring to a boil, stirring to dissolve sugar. Reduce heat and simmer, covered, for 10 mins, or until apples are just tender. Transfer apples and cooking liquid to a large bowl. Add strawberries, cinnamon, flour, vanilla and maple syrup. Transfer to a 2-quart shallow baking dish.
- To make the crumble, process nuts, self-rising flour and rosemary until nuts are coarsely chopped. Add butter and brown sugar and pulse until butter is almost finely chopped. Transfer to a large bowl. Drizzle maple syrup over dry ingredients then mix until ingredients begin to clump together. Sprinkle over fruit and bake for 40 mins, or until golden brown.
- Serve crumble topped with extra strawberries and heavy cream.
