Flounder With Bacon, Potatoes And Salad
- 4 tbsp red wine vinegar
- 1 tsp sugar
- 4 tbsp sunflower oil
- 150 g lettuce, chopped
- 300 g tomatoes, sliced
- 2 None onions, peeled and finely diced
- 120 g smoked bacon, cut into strips
- 1/2 bunch parsley, chopped
- 1 kg potatoes, peeled and halved
- 4 None flounders (about 350g each)
- 6 tbsp plain flour
- 100 g clarified butter
- For the vinaigrette, whisk together the vinegar and sugar and season to taste. Slowly add the oil while whisking vigorously. Toss the lettuce, tomatoes and 1 diced onion with the vinaigrette.
- Cook the bacon in a frying pan over a medium heat until crisp. After about 8 mins, add the remaining diced onion and saute for 3 mins. Cook the potatoes in boiling salted water for 20 mins.
- Coat the fish in seasoned flour. Heat the clarified butter in 2 large frying pans and fry the fish for 4 mins on each side. Serve the fish, salad, potatoes and bacon, garnish with parsley.
