Blackpot Shrimp Get Together

  1. Dice the peppers to about 1/4 the size of the shrimp.
  2. Heat 2 tablespoons of oil until drop of water dances on top.
  3. Stir-fry peppers and onions for 1 minute; set aside.
  4. In same pot, heat remaining 2 tablespoons oil until hot and saute ginger and garlic until slightly brown and aromatic.
  5. Add shrimp, sugar and black pepper.
  6. Stir-fry approximately 5 minutes until each shrimp has assumed a pinkish/red color.
  7. Add soy sauce and vinegar.
  8. Heat to steaming.
  9. Boil and reduce heat to simmer.
  10. Cover.
  11. Allow shrimp to steam in covered pot for approximately 5 minutes.
  12. (Oversteaming causes shells to separate from shrimp.)
  13. Mix in peppers and onions. Garnish and serve in pot.
  14. Serve with rice or French bread.
