Banana Cupcakes With Maple Icing

  1. For the maple icing, beat cream cheese, 2 tbsp maple syrup and lemon zest in a small bowl until light and fluffy. Set aside.
  2. Preheat oven to 400u0b0F. Grease a 12-cup muffin pan. Sift dry ingredients into a large bowl. Add remaining maple syrup and banana. Add eggs, buttermilk and oil and mix until just combined. Transfer to prepared pan. Bake for 20 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  3. Frost cupcakes with maple icing. Sprinkle with walnuts. Serve.
