Easy Currant Bun
- 1 cup self-rising flour
- 1 cup flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup currants
- 1/4 cup sugar
- 1 1/4 cups buttermilk
- None None FOR THE ICING
- 1 cup powdered sugar, sifted
- None None Pink food color
- 1/3 cup flaked coconut
- Preheat the oven to 400u0b0C. Lightly grease and line a baking pan with parchment paper.
- Sift flours, soda and salt into a large bowl. Stir in currants and sugar. Make a well in the center. Pour in buttermilk and mix quickly to a soft, sticky dough.
- Turn dough onto a lightly floured surface. Knead gently into a smooth, round ball. Place on prepared pan.
- Bake 25-30 mins, until bun sounds hollow when tapped. If browning too quickly, cover with foil. Cool in pan 5 mins. Remove from pan; completely on wire rack.
- For the icing, combine powdered sugar and 1 tbsp hot water. Add a few drops of food color, mixing well. Drizzle over bun. Sprinkle with coconut.
