Honey Mustard Chicken Salad

  1. Preheat oven to 350u0b0F. Arrange bread in single layer on a baking sheet. Drizzle with 1 tbsp oil and season. Bake for 6-8 mins, until crisp and golden.
  2. Meanwhile, heat grill pan over medium heat. Brush chicken with 1 tbsp oil and season to taste. Cook for 5-6 mins per side, until cooked through. Let rest for 5 mins. Slice thinly.
  3. Combine avocado, celery and onion. Whisk remaining ingredients together. Season then toss with salad. Serve topped with chicken and croutons.
