Honey Mustard Chicken Salad
- 1/2 None baguette, thinly sliced
- 1/4 cup olive oil + 2 tbsp
- 1 lb skinless chicken breast
- 1 None avocado, pitted, peeled, chopped
- 1 small head celery, thinly sliced
- 1/2 None red onion, sliced
- 1/4 cup cider vinegar
- 2 tbsp honey
- 1 tbsp whole-grain mustard
- Preheat oven to 350u0b0F. Arrange bread in single layer on a baking sheet. Drizzle with 1 tbsp oil and season. Bake for 6-8 mins, until crisp and golden.
- Meanwhile, heat grill pan over medium heat. Brush chicken with 1 tbsp oil and season to taste. Cook for 5-6 mins per side, until cooked through. Let rest for 5 mins. Slice thinly.
- Combine avocado, celery and onion. Whisk remaining ingredients together. Season then toss with salad. Serve topped with chicken and croutons.
