Chocolate And Fig Biscotti
- 1 cup coarsely chopped dried figs
- 1/4 cup orange-flavored liqueur, such as Grand Marnier
- 2 tbsp butter, softened
- 1/2 cup firmly packed light brown sugar
- 1 tsp vanilla extract
- 3 None eggs
- 1 1/3 cups flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 5 oz semi-sweet chocolate, finely chopped
- Combine figs and liqueur in a medium bowl. Cover; let stand 1 hour.
- Beat butter, sugar and vanilla extract in a medium bowl with an electric mixer until combined. Beat in eggs, one at a time (mixture may separate at this stage, but will come together later). Stir in sifted dry ingredients, then fig mixture and chocolate. Cover; refrigerate 1 hour.
- Preheat the oven to 350u0b0F. Line a baking pan with parchment paper.
- Divide the dough in half. Shape each portion into an 8 inch-long log. Place on prepared pan.
- Bake about 25 mins. Cool on pan.
- Reduce oven temperature to 325u0b0F. Using serrated knife, cut logs diagonally into 1/2 inch-thick inch slices. Return slices to baking pan.
- Bake about 30 mins, turning halfway through cooking. Cool on wire racks. Store in an airtight container for up to a week.
