Banana And Honey Loaf
- 1/3 cup clear honey
- 1/2 cup butter, chopped
- 1 None banana, mashed
- 1/3 cup granulated sugar
- 2 None large eggs, lightly beaten
- 1/4 cup milk
- 1 cup whole wheat self-rising flour, plus 2 tbsp
- 1 cup self-rising flour
- 1 tsp pumpkin pie spice
- None None butter and honeycomb, to serve
- Preheat oven to 325u0b0F. Grease and line a 7x3 1/2 inch loaf pan with parchment paper, extending paper at long sides for handles.
- Combine honey and butter in a small saucepan over low heat. Stir until melted.
- Combine banana and sugar in a large bowl. Stir in eggs, milk and honey mixture. Sift flour and spice mix over top then fold in. Transfer to prepared pan and bake for 50-55 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then turn out onto a wire rack. Slice loaf. Serve warm, topped with butter and honeycomb.
