Pork And Beans In Spicy Tomato Sauce
- 3 tbsp olive oil
- 12 None thin slices of sourdough bread
- 500 g smoked pork chop, cut into cubes
- 1 medium onion, finely diced
- 1 None red chilli, finely diced
- 1 clove garlic, finely chopped
- 2 x 425 ml tins chopped tomatoes
- 100 ml vegetable stock
- 425 ml tin of white beans, drained
- 1 bunch thyme, leaves stripped
- Heat 2 tbsp oil in a large saucepan and toast the bread on both sides until golden brown. Season then drain on paper towels. Break into pieces.
- Add 1 tbsp oil to the pan and sear the meat for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 2-3 mins. Add the tomatoes and stock, cover and simmer for 15 mins. Season. Add the beans and thyme and cook for another 5 mins. Serve with the toasted bread pieces.
