Pork And Beans In Spicy Tomato Sauce

  1. Heat 2 tbsp oil in a large saucepan and toast the bread on both sides until golden brown. Season then drain on paper towels. Break into pieces.
  2. Add 1 tbsp oil to the pan and sear the meat for 4-5 mins until browned on all sides. Add the onion, chili and garlic and saute for 2-3 mins. Add the tomatoes and stock, cover and simmer for 15 mins. Season. Add the beans and thyme and cook for another 5 mins. Serve with the toasted bread pieces.
