Spicy Pork Noodle Stir-Fry
- 2 tbsp peanut oil
- 4.5 oz green beans, trimmed, chopped
- 1 None red onion, sliced
- 1 lb ground pork
- 1 inch fresh ginger, peeled, grated
- 1 tsp ground cumin
- 1 tsp dried chili flakes
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 (13.5 oz) can coconut cream
- 7 oz vermicelli noodles, soaking in boiling water for 5 mins, drained
- None None fresh cilantro leaves, to serve
- None None lemon wedges, to serve
- Heat 1 tbsp oil in a wok or large frying pan over high heat. Stir-fry green beans and onion for 1-2 mins. Set aside. Add remaining oil. Stir-fry pork, ginger, cumin and chili flakes for 1-2 mins. Add sugar, soy sauce and thick cream layer from coconut cream. Stir-fry for 1-2 mins, until slightly thickened. Add remaining coconut cream.
- Distribute noodles between serving bowls. Top with pork mixture. Garnish with fresh cilantro leaves and lemon wedges.
