Stracciatella Cupcakes
- 2 cups all-pupose flour
- 2/3 cup sugar
- 4 None medium eggs
- 1 stick butter + 1 tbsp, softened
- 1 cup cream cheese
- 2/3 cup sour cream
- 1 tsp vanilla extract
- 1/4 cup cornstarch
- 3 oz chocolate chips
- 2/3 cup strawberry jam
- 2/3 cup whipping cream
- Preheat oven to 325u0b0F. Mix the flour, 1/4 cup sugar, 1 egg, butter, 2 tbsp water and a pinch of salt into a smooth dough. Cover and chill for 30 minutes.
- Meanwhile, mix the cream cheese, sour cream, vanilla extract, cornstarch and remaining sugar until smooth. Stir in 3 eggs, one at a time, then fold in most of the chocolate chips reserving some for garnish.
- Turn the chilled dough out onto a floured surface and roll out thin. Cut twelve 4 inch circles out and place in the wells of a greased muffin pan. Divide most of the jam between the 12 muffins, top with the cream cheese mixture and bake for 25-30 minutes. Remove from oven and allow to cool for 10 minutes before removing from the muffin pan and cooling on a wire rack.
- Whip the cream until stiff and pipe onto some of the muffins. Drizzle the remaining jam over some, garnish with the remaining chocolate chips and serve.
