Vanilla Passionfruit Bars
- 2 sheets puff pastry
- 1 1/4 cups sugar
- 1 cup cornstarch
- 2.75 oz vanilla pudding mix (not instant)
- 3 cups milk
- 1 1/4 cups heavy cream
- 1/3 cup butter
- 2 None large egg yolks
- 2 tsp vanilla bean paste
- 1/2 cup powdered sugar, sifted
- 3 None passionfruits, pulp scooped out
- Preheat oven to 425u0b0F. Lightly grease a 9 inch square cake pan and line with parchment paper, leaving a 1 inch overhang.
- Line 2 baking sheets with parchment paper, place pastry sheets on top and bake for 10-12 mins, until golden. Gently flatten pastry with hand, then trim to fit base of prepared cake pan. Lay 1 sheet in pan.
- In a medium saucepan, combine sugar, cornstarch and pudding mix. Combine milk and cream in a bowl. Add a little to the sugar mixture and stir to form a smooth paste. Blend remaining milk mixture into sugar mixture, stirring until smooth.
- Add 1/4 cup butter and bring to a boil over medium heat, stirring. Reduce heat to very low and simmer, stirring, for 4-5 mins, until mixture is thick and smooth. Remove from heat. Stir in egg yolks and vanilla bean paste. Pour over pastry sheet. Top with remaining sheet. Chill for 1 hour.
- Combine powdered sugar and remaining butter in a small heatproof bowl. Stir in enough passionfruit pulp to make a smooth paste. Place over a saucepan of simmering water and heat gently, stirring, for 2-3 mins, until mixture is a spreadable consistency. Spread over top of bars. Chill for 30 mins, or until set. Cut into squares to serve.
