Quick Three Cheese Frittata

  1. Preheat the broiler.
  2. Heat 1/2 the butter in an 8-inch nonstick skillet on high heat. Cook the chard, stirring, until wilted. Remove from the pan and drain well.
  3. Combine the eggs, chard and 2/3 cup pecorino in a large bowl and season.
  4. Melt the remaining butter in the same pan on medium-low heat. Pour in the egg mixture, then top with gorgonzola and ricotta. Cook until the frittata is almost set. Place the frittata under the broiler. Broill for about 5 mins or until set and browned lightly.
  5. Combine the arugula, oil, lemon juice and remaining 1/4 cup pecorino in a medium bowl. Serve with the frittata. Accompany with warm toast, if desired.
