Quick Three Cheese Frittata
- 12 oz Swiss chard, trimmed and coarsely shredded
- 3 tbsp butter
- 8 None eggs
- 2/3 cup plus 1/4 cup finely grated pecorino cheese
- 1/3 cup crumbled gorgonzola cheese
- 1/3 cup crumbled firm ricotta cheese or feta cheese
- 3 oz arugula
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Preheat the broiler.
- Heat 1/2 the butter in an 8-inch nonstick skillet on high heat. Cook the chard, stirring, until wilted. Remove from the pan and drain well.
- Combine the eggs, chard and 2/3 cup pecorino in a large bowl and season.
- Melt the remaining butter in the same pan on medium-low heat. Pour in the egg mixture, then top with gorgonzola and ricotta. Cook until the frittata is almost set. Place the frittata under the broiler. Broill for about 5 mins or until set and browned lightly.
- Combine the arugula, oil, lemon juice and remaining 1/4 cup pecorino in a medium bowl. Serve with the frittata. Accompany with warm toast, if desired.
