Chicken Fajitas
- 1 lb boneless skinless chicken breasts, cut into thin strips
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1/2 tsp smoked paprika
- 2 tbsp olive oil
- 1 medium red pepper, thinly sliced
- 1 medium yellow pepper, thinly sliced
- 1 medium red onion, thinly sliced
- 1/4 cup coarsely chopped fresh cilantro
- 12 None flour tortillas (8 inches each)
- 1 cup sour cream
- 1 None lime, cut into wedges
- 1/4 cup loosely packed fresh cilantro leaves
- Combine chicken, spices and half the oil in a large bowl. Season.
- Heat remaining oil in a large skillet on high heat. Cook peppers and onion, stirring, for 5 mins or until soft. Add chopped cilantro. Transfer to a medium bowl; cover to keep warm.
- Add chicken mixture to pan; cook, stirring, until browned and cooked through. Return pepper mixture to pan with 1/4 cup water; cook, stirring, until heated through. Season to taste.
- Meanwhile, warm tortillas in microwave according to package directions.
- Serve chicken mixture with tortillas, sour cream, lime wedges and cilantro leaves.
