Sweet And Sour Pork

  1. Combine reserved pineapple juice, soy sauce, tomato sauce, vinegar, sugar and garlic.
  2. Toss pork with cornstarch, shaking off excess. Heat 2 tbsp oil in a wok or frying pan over high heat. Stir-fry pork, in batches, for 3 mins, or until browned. Transfer to a plate.
  3. Add remaining oil to wok. Stir-fry onion, pepper and celery for 3 mins, or until tender. Return pork to wok along with pineapple pieces and sauce. Stir-fry for 1 min, or until heated through. Serve with rice.
