Chicken Scampi

  1. In a large frying pan, heat 2 tbsp olive oil over medium heat. Cook peppers and red onion for 5 mins, until softened. Remove from heat and set aside.
  2. Season chicken. Add remaining oil to pan. Cook chicken for 4 mins per side, or until cooked through. Remove from heat and set aside.
  3. Add Spanish onion and garlic to pan. Cook for 2 mins. Add chicken stock, sauce mix and milk. Bring to a boil and cook for 2 mins, until sauce thickens. Season and add red pepper flakes, lemon juice and 2 tbsp mixed herbs. Return chicken to sauce to warm through. Serve over pasta with sauteed vegetables. Garnish with remaining herbs.
