Oatmeal Muffins
- 1 c. quick cooking oats, uncooked
- 1 c. buttermilk or milk and 2 Tbsp. vinegar
- 1 c. firmly packed light brown sugar
- 1 egg, slightly beaten
- 1 3/4 flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. mace
- 1/2 c. vegetable oil
- 1/2 tsp. grated lemon rind
- 1/2 c. raisins
- 2 1/2 c. flour
- 2 c. sugar
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 sticks butter (or 1 stick butter and 1 stick margarine)
- 3 eggs
- 1 tsp. vanilla
- 1/2 tsp. each of lemon, coconut and almond extract
- 1 c. sour cream
- Beat 3 minutes at medium speed.
- Bake in greased and floured 10-inch Bundt pan at 350u0b0 for 60 minutes or until tests done.
