Mallorcan Style Fish

  1. Heat 4 tbsp oil in a large frying pan. Saute potatoes over medium heat, until golden brown. Season then arrange in a baking dish.
  2. Meanwhile, heat 2 tbsp oil in a pan. Saute peppers, onion and garlic. Season and add thyme, paprika and aniseed. Cook for 5 mins. Add white wine and simmer for 5 mins.
  3. Preheat oven to 325u0b0F. Lightly coat fish fillets with flour, shaking off excess. Heat remaining oil in a nonstick frying pan. Saute fish for about 2 mins per side. Drain on paper towels. Arrange on top of potatoes then distribute peppers over fish. Bake for 15 mins, or until cooked to your liking. Serve sprinkled with parsley.
