Tomato And Bean Salad With Lemon Dressing
- 8 oz green beans, cut into 2 inch lengths
- 1 lb frozen fava beans
- 1 head romaine lettuce, leaves separated
- 8 oz watercress
- 8 oz cherry tomatoes, halved
- 1 None green onion, finely chopped
- 2 tbsp parsley leaves, snipped
- None None Lemon dressing
- 2 tbsp lemon juice
- 1/3 cup extra-virgin olive oil
- Bring a pan of salted water to a boil. Add the green beans and cook for 2 mins. Drain, rinse under cold water, then drain again. Repeat with the fava beans and peel away the white the skins, discarding the skins. Place all the beans in a large serving bowl.
- To make the lemon dressing, place the lemon juice in a bowl and gradually whisk in oil. Season to taste.
- Add the remaining ingredients to the beans and pour over the lemon dressing. Toss gently to combine and serve.
