French Herb Chicken

  1. Sprinkle the chicken with salt, black pepper and paprika. Heat the oil in a dutch over or casserole pan and fry the chicken over medium heat, turning occasionally, for 5 mins. Add the potatoes, shallots and garlic and fry over medium heat for 4 mins. Add the wine and stock, cover and simmer over low heat for 15 mins.
  2. Add the herbs and olives, cover and continue cooking for 15 mins. Season with salt and black pepper. Serve garnished with fresh herbs.
