Beef Fajita Wraps
- 4 None large tortillas
- 2 tbsp olive oil
- 1 None medium onion, peeled and sliced thinly
- 1 None small green pepper, sliced thinly
- 2 cloves garlic, peeled and crushed
- 1 lb beef strips (tender cut such as rump, fillet or sirloin)
- 2 tsp sweet paprika
- 1 tbsp tomato paste
- 2 1/2 cups baby spinach leaves
- 1 None large tomato, seeded and chopped
- 1/2 cup sour cream
- Preheat the oven to 350u0b0F. Wrap the tortillas in foil and bake for about 10 mins or until heated through.
- Meanwhile, heat half the oil in a large shallow frying pan and cook the onion, pepper and garlic, stirring, until the onion softens. Remove from the pan.
- Heat the remaining oil in the pan. Cook the beef over high heat until browned, then stir in the paprika and tomato paste. Season to taste, then stir in 2 tbsp water.
- Return the onion mixture to pan and cook, stirring, until combined.
- Divide the spinach among the tortillas, then top with the beef mixture, tomato and sour cream. Fold in half, then fold in the sides to enclose the filling and form a cone. Serve.
