Soft Sugar Cookies

  1. Combine first 5 ingredients in large mixing bowl.
  2. Rub out all lumps, then add shortening.
  3. Rub into dry ingredients until it disappears.
  4. Beat eggs into a small bowl and add buttermilk, vanilla and lemon extract.
  5. Add to dry ingredients and stir until well combined.
  6. Chill one hour or overnight.
  7. Dust hands with flour and roll into balls the size of ping pong balls.
  8. Place 2 inches apart on greased cookie sheet.
  9. Grease bottom of a drinking glass first, then dip into sugar for each cookie.
  10. Press about 1/4-inch thick.
  11. Bake 10 minutes at 350u0b0.
