Mini Apple Pies
- 1/4 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup ground almonds
- 1/2 cup cold butter, chopped
- 1 None egg
- 1 lb apple pie filling
- 1 tsp pumpkin pie spice
- None None whipped cream, to serve
- Sift flour into a large bowl. Add sugar and ground almonds. Cut in butter until mixture resembles breadcrumbs. Add egg and enough water to form a firm, pliable dough. Lightly knead into a ball, wrap in plastic wrap and chill for 30 mins.
- Meanwhile, to make filling, combine apple pie filling and spice mix. Set aside.
- Preheat oven to 400u0b0F. Lightly grease a 12-cup muffin tray. Roll out 2/3 of dough until 1/4 inch thick. Cut out 12 - 3 inch discs and use to line prepared pan. Trim edges, prick bases with a fork and bake for 10 mins. Cool slightly then distribute filling between tart shells. Grate or crumble remaining dough over pies, sprinkle with sugar and bake for 20-25 mins, until golden. Serve warm with whipped cream.
