Five-Spice Chicken With Broccolini And Cashew Salad
- 3 tbsp olive oil
- 1/2 tbsp Chinese five-spice mix
- 3 tsp garlic salt
- 8 None chicken thighs, bone-in
- None None Broccolini and Cashew Salad
- 2 bunches broccolini
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 bunch fresh chives, chopped
- 1/3 cup unsalted cashews, roughly chopped
- Preheat oven to 450u0b0F. Combine olive oil, five-spice mix and garlic salt. Add chicken and toss to coat. Transfer to a baking tray and cook for 30 mins, or until cooked through and skin is crispy.
- Meanwhile, to make the salad, blanch broccolini in boiling salted water for 2-3 mins, or until just tender. Drain and shock in ice water. Drain. Whisk together olive oil, lemon juice, honey and chives. Season. Toss with broccolini then sprinkle with cashews.
- Serve roasted chicken with salad on the side.
