Taco Salad
- 1 1/2 lb. ground beef
- 1 1/2 c. diced onion
- 1 c. diced celery
- 1 c. diced green pepper
- 3 cloves garlic, diced (optional)
- 1 lb. Velveeta cheese
- 1 (8 oz.) can Ortega tomatoes and green chili peppers
- 1 head lettuce
- 2 large firm tomatoes
- 1 (1 lb.) pkg. Fritos
- salt, chili powder and ground cumin to taste
- Fry the ground beef and small amount of oil until brown. Saute onion, celery and green pepper in oil.
- Combine the meat and vegetables; simmer for 15 minutes.
- Season with salt.
- Place chili powder and ground cumin in top of double boiler.
- Melt cheese; add can of tomatoes to spices and chili pepper.
- You may only add 1/2 can, if desired.
- Cut lettuce coarsely; cut tomatoes in chunks. Mix together.
- Add Fritos; mix all ingredients, except melted cheese mixture.
- Top with hot cheese; mix again.
- Serve immediately.
- Serves 10 to 12.
