Mexican Pan Pizza

  1. Heat 1 tbsp oil in a 9 1/2 inch frying pan over medium-high heat. Cook meatballs for 6-7 mins, or until browned. Remove from heat and transfer to a plate. Wipe pan clean.
  2. Combine flour, yeast, salt and sugar in a medium bowl. Make a well in the center and add 3/4 cup lukewarm water, mixing until uniform. Turn dough out onto a lightly floured work surface and knead until smooth. Shape into a disc then roll out into a 10 inch round.
  3. Add remaining oil to frying pan and place over medium-high heat. Place dough in pan to cover base. Cook, covered, for 5 mins, or until golden-brown and crisp underneath.
  4. Preheat broiler. Spread salsa over pizza base then top with beans, tomatoes, cheese and meatballs. Broil for 6-7 mins, or until cheese melts and is golden. Serve pizza topped with sour cream and cilantro.
