Salad Dumplings

  1. Whisk together vinegar, mustard and honey and season to taste. Add 2 tbsp oil in a trickle, while stirring. Whisk chives and onion into the dressing. Saute bacon in a dry pan for 5 mins, then drain on paper towels. Saute leeks for 5 mins in the bacon fat.
  2. Cook dumplings according to package instructions. Heat 1 tbsp oil in a pan and fry dumplings for 5 mins. Season to taste. To serve, arrange dumplings, lettuce, bacon and leeks on 4 plates and drizzle with the dressing.
