Salad Dumplings
- 1/4 bunch chives, finely chopped
- 4 tbsp fruit vinegar
- 1-2 tsp Dijon mustard
- 1 tbsp honey
- 3 tbsp sunflower oil
- 1 None small red onion, peeled and diced
- 100 g smoked streaky bacon, sliced
- 1 None leek, trimmed, washed and sliced
- 150 g cos lettuce, washed, torn into small pieces
- 400 g mini dumplings
- Whisk together vinegar, mustard and honey and season to taste. Add 2 tbsp oil in a trickle, while stirring. Whisk chives and onion into the dressing. Saute bacon in a dry pan for 5 mins, then drain on paper towels. Saute leeks for 5 mins in the bacon fat.
- Cook dumplings according to package instructions. Heat 1 tbsp oil in a pan and fry dumplings for 5 mins. Season to taste. To serve, arrange dumplings, lettuce, bacon and leeks on 4 plates and drizzle with the dressing.
