Grilled Whiting Fillets With Beurre Blanc
- 1 None spring onion, trimmed, finely chopped
- 1/2 cup dry white wine
- 1 pinch white pepper
- 7 tbsp unsalted butter, cut into 6 chunks, plus 2 tbsp melted
- 1 tsp lemon juice
- 8 None whiting fillets
- None None Steamed green vegetables, to serve
- Place green onion, wine and white pepper in a small saucepan. Simmer 10-12 minutes, until liquid has reduced to about 1 tablespoon. Strain; discard solids.
- Return liquid to a clean, small saucepan on medium heat. Whisk in 7 tbsp butter, 1 piece at a time, until all butter is incorporated and sauce is creamy and slightly thickened.
- Remove from heat; whisk in lemon juice. Season to taste.
- Preheat outdoor grill or grill pan to hot.
- Brush whiting with melted butter. Grill 3-5 minutes each side, until cooked through.
- Serve whiting drizzled with sauce; accompany with steamed vegetables.
