Grilled Whiting Fillets With Beurre Blanc

  1. Place green onion, wine and white pepper in a small saucepan. Simmer 10-12 minutes, until liquid has reduced to about 1 tablespoon. Strain; discard solids.
  2. Return liquid to a clean, small saucepan on medium heat. Whisk in 7 tbsp butter, 1 piece at a time, until all butter is incorporated and sauce is creamy and slightly thickened.
  3. Remove from heat; whisk in lemon juice. Season to taste.
  4. Preheat outdoor grill or grill pan to hot.
  5. Brush whiting with melted butter. Grill 3-5 minutes each side, until cooked through.
  6. Serve whiting drizzled with sauce; accompany with steamed vegetables.
