Ham And Egg Rolls

  1. Whisk eggs, soy sauce and chili together. Lightly coat a 5 inch nonstick frying pan with oil and place over medium heat. Add 1/4 cup egg mixture and swirl to coat. Cook for 1 min, or until omelette is golden brown on the bottom. Flip over and cook for 1 min. Slide out onto a heatproof plate and cover with foil. Repeat with remaining batter.
  2. Arrange omelettes on a clean work surface. Top each with a slice of ham and a piece of cucumber. Roll up to enclose ham and cucumber, leaving ends open. Tie around the middle with green onion strips to secure. Place on a serving platter and serve with hoisin sauce.
