Tikka Fish Skewers With Coconut Sambal
- 1/4 cup tikka masala curry paste
- 1/4 cup plain yogurt
- 1 1/3 lbs firm white fish fillets, cut into 3/4-inch pieces
- 1/2 cup flaked coconut
- 1/4 cup chopped fresh cilantro
- 2 tbsp lemon juice
- 1 None red chili pepper, seeded and finely chopped
- 1 medium zucchini, cut into 1/2-inch thick rounds
- 1 medium green pepper, seeded and cut into 3/4-inch pieces
- 1 large red pepper, seeded and cut into 3/4-inch pieces
- 9 oz cherry tomatoes
- None None Steamed rice, to serve
- Mix curry paste and yogurt in a large glass or ceramic bowl. Add fish; turn to coat. Let stand for 5 mins.
- Meanwhile, place coconut in a medium skillet on medium heat. Cook, stirring, for 2-3 mins, or until golden brown. Transfer to a small bowl. Cool. Add cilantro, juice and chili pepper. Season sambal with salt and pepper.
- Thread fish, zucchini, peppers and tomatoes alternately onto 8 skewers. Preheat a grill pan on medium-high heat or heat grill to medium. Spray skewers with no stick cooking spray. Cook, turning, for 6-7 mins, or until browned and cooked through. Serve skewers with sambal and rice.
