Tikka Fish Skewers With Coconut Sambal

  1. Mix curry paste and yogurt in a large glass or ceramic bowl. Add fish; turn to coat. Let stand for 5 mins.
  2. Meanwhile, place coconut in a medium skillet on medium heat. Cook, stirring, for 2-3 mins, or until golden brown. Transfer to a small bowl. Cool. Add cilantro, juice and chili pepper. Season sambal with salt and pepper.
  3. Thread fish, zucchini, peppers and tomatoes alternately onto 8 skewers. Preheat a grill pan on medium-high heat or heat grill to medium. Spray skewers with no stick cooking spray. Cook, turning, for 6-7 mins, or until browned and cooked through. Serve skewers with sambal and rice.
