Apricot Crumble Bars
- None None For the Crust
- 7 tbsp butter, melted
- 1 cup all-purpose flour, plus 2 tbsp
- 1/3 cup granulated sugar
- None None For the Filling
- 9 oz finely chopped dried apricots
- 1/4 cup granulated sugar
- None None For the Coconut Topping
- 1/3 cup desiccated coconut
- 3 tbsp shredded coconut
- 1/2 cup all-purpose flour
- 1/2 cup firmly packed brown sugar
- Preheat oven to 350u0b0F. Grease a 7x12 inch rimmed baking pan.
- To make the crust, in a small bowl, combine butter, flour and sugar. Transfer to prepared pan and press into base. Bake for 20 mins, or until golden brown.
- Meanwhile, to make the filling, combine apricots, 1 cup water and sugar in a medium saucepan. Simmer for 10 mins, or until thick, stirring occasionally.
- To make the coconut topping, combine all ingredients in a medium bowl and mix to combine.
- Spread the hot filling over the hot base and sprinkle with coconut topping. Bake for 20 mins, or until golden brown. Let cool in pan. Cut into bars to serve.
