Asian Chicken Salad
- 1 None store-bought rotisserie chicken, shredded
- 10 oz cabbage, shredded
- 1 cup bean sprouts
- 4 None radishes, sliced
- 2 None carrots, cut into matchsticks
- 1 medium red onion, halved, thinly sliced
- 1/4 cup sweet chili sauce
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 2 tsp sesame oil
- 1 clove garlic, crushed
- 1/2 cup fresh cilantro leaves
- 1/2 cup cashews, toasted
- Mix chicken, cabbage, bean sprouts, radishes, carrots and onion in a large bowl.
- For the dressing, whisk chili sauce, lime juice, fish sauce, sesame oil and garlic in a small bowl until well blended.
- Add cilantro and cashews to the salad. Pour dressing over salad and toss to coat.
