Chili Shrimp With Mango Salad
- 2 lbs large shrimp, peeled and deveined, tails intact
- 1/2 tsp ground turmeric
- 1/4-1/2 tsp cayenne pepper
- 2 tsp sweet paprika
- 2 cloves garlic, crushed
- 2 large mangoes, peeled, pitted and coarsely chopped
- 1 small red onion, thinly sliced
- 1 None fresh long red chili pepper, thinly sliced
- 1 cup bean sprouts
- 1/2 cup coarsely chopped fresh cilantro
- 2 tsp fish sauce
- 2 tsp grated palm sugar or brown sugar
- 2 tbsp lime juice
- 1 tbsp peanut oil
- For the mango salad, combine mango, onion, chili pepper, sprouts and cilantro in a large bowl. For the dressing, whisk fish sauce, sugar, lime juice and peanut oil in a small bowl. Drizzle over salad; toss well.
- Combine shrimp with turmeric, cayenne pepper, paprika and garlic in a large bowl.
- Cook shrimp mixture, in batches, on a heated oiled grill pan until lightly browned.
- Serve shrimp with salad.
