Fish Stew
- 1 medium onion
- 1 tsp. chili powder
- 1 (4 oz.) can chopped green chilies
- 3 c. chopped tomatoes
- 1 c. frozen cooked shrimp
- 1 lb. (1 inch pieces) frozen cod
- 2 cloves garlic
- 3 c. chicken broth
- 1 c. chopped green pepper
- 1 1/2 c. plain yogurt
- In Dutch oven, cook onion and garlic about 5 minutes, stirring often until onion is tender.
- Stir in chili powder, cook 2 minutes stirring often.
- Stir in broth and chilies.
- Heat to boiling, reduce heat; cover and simmer 20 minutes.
- Stir in tomatoes, pepper, shrimp and fish.
- Heat to boiling; reduce heat.
- Cover and simmer 5 minutes or until fish flakes easily with fork and shrimp are heated through.
- Gradually stir in yogurt and heat just until hot (do not boil).
