Peppered Herb Biscuits
- 2 cups cake flour
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp ground black pepper
- 6 tbsp cold butter, cubed
- 2 tbsp minced scallion
- 2 tbsp chopped fresh parsley leaves, plus extra leaves for garnish
- 1 cup buttermilk
- Preheat oven to 450u0b0F.
- Mix together flour, baking powder, salt and pepper. Cut in butter until butter pieces are the size of peas. Stir in scallion and chopped parsley. Make a well in the center and pour in buttermilk. Blend with a fork until a soft dough forms.
- Turn dough out onto a lightly floured work surface. Pat dough into a 1 inch thick disc. Cut out 2 inch round biscuits and place on a greased baking sheet. Top each biscuit with a parsley leaf. Bake for 10-12 mins, or until light golden brown. Serve warm.
