Whole Wheat Banana And Prune Bread

  1. Preheat the oven to 350u0b0F. Grease an 8 x 5-inch loaf pan; line the bottom and long sides with parchment paper, extending the paper 1 inch over the sides.
  2. Sift the flour and cinnamon into a large bowl. Add the lemon peel, butter, sugar and eggs. Beat with an electric mixer on a low speed until ingredients are combined.
  3. Increase the speed to medium; beat the mixture until smooth. Stir in the banana and prunes. Spread into the prepared pan.
  4. Bake for about 1 hour, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
