Whole Wheat Banana And Prune Bread
- 1 3/4 cups whole wheat self-rising flour
- 1 tsp ground cinnamon
- 2 tsp finely grated lemon peel
- 7 tbsp butter, softened
- 3/4 cup firmly packed dark brown sugar
- 2 None eggs
- 1 cup mashed banana
- 1 cup pitted prunes, coarsely chopped
- Preheat the oven to 350u0b0F. Grease an 8 x 5-inch loaf pan; line the bottom and long sides with parchment paper, extending the paper 1 inch over the sides.
- Sift the flour and cinnamon into a large bowl. Add the lemon peel, butter, sugar and eggs. Beat with an electric mixer on a low speed until ingredients are combined.
- Increase the speed to medium; beat the mixture until smooth. Stir in the banana and prunes. Spread into the prepared pan.
- Bake for about 1 hour, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
