Salami Pesto Muffins

  1. Preheat the oven to 350u0b0F. Lightly grease a 12-cup muffin pan.
  2. Sift flour into a large bowl. Stir in salami, Parmesan cheese and red pepper flakes. Whisk milk, butter and egg in a medium bowl. Season to taste.
  3. Make a well in the center of dry ingredients. Add milk mixture all at once. Mix lightly until just combined. Do not over-mix.
  4. Spoon batter into prepared pan, filling each cup 1/2 full. Top each with 1 tsp of pesto. Sprinkle with mozzarella cheese. Cover evenly with remaining batter.
  5. Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; completely on wire rack.
