Apricot And Almond Meringue Bars
- 9 tbsp butter, at room temperature
- 1/4 cup sugar
- 1 large egg, separated
- 1/3 cup all purpose flour
- 1 tsp baking powder
- 1 cup apricot jam
- 2/3 cup powdered sugar
- 1/3 cup slivered almonds
- Preheat oven to 350u0b0F. Line a 12 x 8 inch brownie pan with parchment paper, extending paper at long sides for handles. Using an electric mixer, beat butter and sugar in a small bowl until light and creamy. Add egg yolk and beat until combined. Sift flour and baking powder over butter mixture and stir until combined.
- Press dough evenly into base of prepared pan. Spread jam evenly over dough.
- Using an electric mixer, beat egg white in a small bowl until soft peaks form. Add shifted powdered sugar and beat until well combined and stiff. Spoon on to jam, then gently spread with a spatula. Sprinkle with almonds.
- Bake for 20-25 minutes or until light golden and crisp to touch. Cool in pan. Transfer to a cutting board and cut into 16 pieces. Serve.
